100 year Old Steamed Chocolate Pudding

Great Grandma Barrus made Steamed  Chocolate pudding for at 80years, we don't know when she started making it all we know is it was always on the Thanksgiving Dessert Table.  At 100years old Great Grandma made her Steamed Chocolate Pudding for the last time.  The following Thanksgiving 20 Steamed Chocolate Puddings were on the dessert table in her honor.

that recipe is not 100 years old

only Grandma made it
we are trying to figure it out

mine was to large


it tasted great !!


Lia's Clam Sauce

Lia has taught me how to make the simplest and yummiest Clam Sauce


it's almost sinful to have something this yummy be so easy

make it for company they'll think you spent hours cooking
when really you spent hours having fun!


ingredients your cupboard should always have on hand


onions go into a lg saute pan


add the butter slowly saute over med low heat


when onions are translucent
add the clam juice simmer for a few minutes


then the clams
I like chopped clams Lia likes minced


add oregano be sure to rub it between your hands to release the flavor


if Lia isn't looking sprinkle in a few red pepper flakes


 and if she still isn't looking


 just a splash of white wine


ready for the noodles


I like to let the noodles finish cooking in the clam sauce
absorbing great flavor


ENJOY!!!



Clam Sauce Lia’s

1tbs olive oil
1 lg onion
sauté
add 1 stick butter
3 chopped garlic

1 bottle clam juice
lots of oregano rubbed between hands to release flavor

1 can minced clams

1pkg fettucine, cooked according to package

(Red pepper flakes)

Mom's Country Style Barbeque Ribs with Polenta

Barbeque Pork Ribs, Chicken or Beef

Mom's version of Barbeque Ribs is not a stick to the ribs type of sauce there is a lot of yummy sauce for serving over over polenta or noodles
 

 The original recipe calls for Country Style Pork ribs with the bone

 Mom used chicken, beef she even used sausages it all worked
 
 
while the meat is browning in the oven
simmer the sauce on the stove
 
 
the onions are a big part of the unique barbeque flavor
if your not a big fan of onions use onion powder

 
browning the ribs gives a boost of flavor
 
 
pour the sauce over the ribs and pop back into the oven
                  
 
make the polenta
the sauce is also very good over buttered elbows
yummmm that's how we had it as kids
ploenta was just to weird as a kid

Serving Size : 6

2 onions, chopped

2 cups whole tomatoes, 16 oz can

1 cup ketchup

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 teaspoon Worcestershire sauce gf

tabasco sauce

salt and pepper

1 pound chicken, beef or pork

Put pork, beef, sausages or chicken in a 9x9" baking pan. Bake in 350 degree oven for 20 minutes.
Mix ingredients (except meat) in saucepan on stove. Simmer for 30 minutes.
Then pour sauce over meat and bake for 1 hour longer. If using boneless chicken breast cook for less time.
Serving Ideas : serve over rice or gf noodles
This is also great in the slowcooker brown the meat in a saute pan or the oven, put in the crock with the sauce ingredients cook on low 8hours or high 4 hours.  Adjust the time if using boneless chicken.

Mom's Lasagna...... no ricotta no cottage cheese pure deliciousness

Mom's Lasagna doesn't have ricotta cheese , Lia is not a big fan of ricotta cheese
 and yet we never had Mom's lasagna while she was living in Florida
Today she was going to teach my kids how to make it

Somehow my kids got Grandma to do all the work
spread the sauce to the edges giving the bottom a good covering
 And picking out the noodles to fit just right

  Amount  Measure       Ingredient -- Preparation Method

   1      16 ounce      lasagna noodles
   1      large block   sharp cheddar cheese
   2      packages      mozzarella cheese
                        grated parmesan cheese
                        Ma's sauce

Cook noodles.  Place 1/5 sauce over bottom of pan(13x9).  Lay noodles over sauce(cut to fit), then sauce, thin slices sharp cheddar.  Repeat noodles, sauce and layer of mozzarella.  Repeat with noddles, sauce and layer of both cheeses.  Then rest of sauce on top.  Sprinkle with parmesan cheese.  Bake at 350 degrees until bubbly, 15-20 minutes. 



Ma's Spaghetti Sauce

  32      ounces        whole tomatoes (mashed)
  16      ounces        tomato sauce
  12      ounces        tomato paste
   1      pound         hamburger
     1/2  teaspoon      oregano
     1/2  teaspoon      basil
                        garlic to taste
                        oil to cover bottom of pan

  Open cans of tomatoes and sprinkle sugar over tomatoes.Heat oil and garlic, add hamburger, brown. Add remaining ingredients.  Simmer 3-6 hours.

Great to add to a holiday party or dress up any meal Green Beans

Easy peasy deliciousy Green Beans

Tomatoe Green Beans
Fresh or fozen grean beans work in this easy side dish
that will have you looking like you spent hours preparing


Mushroom GreenBeans
 
Tomatoe Greenbeans
Put 1 1/2 lbs fresh green beans or a bag of frozen Green beans in saucepan over med heat
Add diced Tomatoes
simmer until the green beans are the crunch level you like
or the mushy level my Mom likes.
I like to saute an onion then add greenbeans, fresh garlic is always yummy
 
Mushroom GreenBeans
Put 2tbs butter in lg saute pan over med heat , add 1 lb sliced mushrooms, let cook about 5 minute to carmelize a little, add 1 1/2 lbs greenbeans or frozen green beans
Add 2-4 tbs balsamic vinegar (i like alot)
saute until the green beans are the crunch level you like
or again the mushy level my Mom likes.
I like to saute an onion then add greenbeans

Vegetable Lasagna



Vegetable Lasagna

   1      pkg           Pastariso Lasagna Noodles
                        CHEESE LAYER
   6      tablespoons   butter
   6      tablespoons   sweet rice flour (all purpose if your aren't gluten free)
   1      teaspoon      salt
   4      cups          milk
   4      cups          shredded cheddar cheese
                        dash of pepper
                        VEGETABLE LAYER
   1      medium        onion, chopped
   1      9 oz          frozen spinach, thawed squeeze liquid out
   1      9oz           frozen broccoli, thawed & chopped
   2                    carrots, grated
   1      tablespoon    butter

In a saucepan, melt butter, blend in sweet rice flour, salt & pepper.  Add milk & cook over medium heat until mixture boils and thickens, stirring constantly.  Stir in cheese, heat through.  Set aside.

In a Skillet, melt 1 tablespoon butter.  Saute onion and carrot until onion is translucent.  Add spinach and broccoli, mix well.

Cook noodles following pkg instructions.

In a 9x13 baking dish: cover bottom with thin layer of cheese sauce.
Add a layer of lasagna noodles, then 1/2 of the vegetable mixture.  Pour about 1/4-1/3 of the cheese sauce over vegetables. 
Repeat noodles, 1/2 vegetables & 1/4-1/3 of cheese sauce.  Top with a layer of noodles. Then cover with remaining cheese sauce, making sure to cover noodles completely.

Bake 350 degrees for 20-30 minutes, edges will be bubbly.

NOTES : Do not boil cheese it will break down.
Throw in a can of mushrooms if you like them.
May use all broccoli instead of spinach.
Vegetables are flexible use what you like.
Freezes well.
