Ryan loves cooking for us
Snowstorm after snowstorm it's good to finally get together .
It's Lia and Will's Bday I'm making Nonna's Never Fail Chocolate Cake
while Ryan slices the peppers and onions.
Ryan uses 1 green pepper, 1 orange pepper, 1 red pepper
and 2 medium Bermuda onions
while the peppers and onions are sautéing
Ryan makes Guacamole
mashing avocadoes
Adding finely diced Bermuda onion
diced tomato and a squeeze of lime
Ryan marinated the steaks and chicken at home
he brought his favorite grilling pan - look at the pretty grill lines he gets with his pan
It does take two people to operate the grill pan at least that's what Ryan said
I think he just wanted company in the kitchen
the fajitas are almost done the chicken is sizzling while the steak rests
Ryan cooked the steak perfectly,
the real fun begins - put a tortilla on a plate, add chicken/steak,
guacamole, sour cream, grated monterey cheese
perfectly sautéed peppers & onion,
roll and enjoy!!

Fajita's
1 lb marinated Steak, recipe below
3 bell peppers, red, green , orange, sliced
2 Bermuda onions, sliced
2 tbs olive oil
Guacamole, Sour cream, 1 cup Monterey jack cheese
8 flour or corn tortillas
Prepare
Marinate meat 2-12 hours before cooking fajitas.
Marinade for Steak or Chicken
Ingredients
1/8 cup oil ( I use olive oil)
¾ cup apple cider vinegar
¼ cup soy sauce ( Use more or less for preferred taste)
¼ cup packed brown sugar
2 cloves garlic chopped
1 Tbsp. cilantro
1lb flank steak, or chicken thighs or breast
Mix ingredients together, add meat .
Marinate meat 2-12 hours before cooking fajitas.

Guacamole
1 tomato, diced
½ cup onion, dices
2 cloves garlic, crushed
¼ cup red pepper diced
2 limes juiced
DirectionsMash avocadoes, mix in the rest of the ingredients into mashed avocado.
Guacamole turns an icky brown if left out in the open air if you make it ahead of time take plastic wrap and press it completely over the guacamole. If there is any air pockets you will have brown spots. Scoop the brown off and serve.
