One pan in the oven Fish Chowder always awesome

Even better the second day if you can keep everyone from taste testing till there is nothing left to taste test.



Baked Fish Chowder



  Amount  Measure       Ingredient -- Preparation Method

   1      pound         haddock
   2                    potatoes, peeled and chopped, I like marble size
                        few chopped celery leaves
   1                    bay leaf
   1 1/4  teaspoons     salt
   1                    garlic clove, crushed
   2      small         onions, sliced
     1/4  cup           butter
     1/8  teaspoon      white pepper
   1      cup           boiling water I use a bottle of clam broth to bring out the seafood flavor
   1      can            evaporated milk

Put all ingredients except milk into 2 quart casserole dish.  Potatoes on bottom fish on top.  Cover and bake at 375 for one hour.  Heat milk to scalding and add to chowder.  Stir to break up fish.

If you use a casserole dish that can go on the stove top I prefer to bake 1 hour put on stove top add milk and heat through.
