Chicken Sausage Vegetable Medley crockpot or not

Oh the weather outside is delightful..........
But the bikini is so frightful
And since we've places to go.
Let It Go! Let It Go! Let It Go!

Oh, it doesn't show signs of stopping.........
And I've brought some veggies for munching.
The carbs are turned way down low
,

Time to get back to eating healthy
Chicken Sausage Medley is easy on the hips

It is so flexible it should be on your weekly rotation
chop 4-6 cups of what ever vegetables you have in the fridge


2" chunks of vegetables
baby carrots work great no mess no fuss


I like 6 cups of veggies
today I added 1/2 bag of frozen green beans
I just didn't have much for fresh veggies 



today we are avoiding carbs I didn't add white potatoes
 I bulked it up with a can of diced tomatoes
tomorrow, well who knows what tomorrow will bring


for the crockpot method you can assemble it in the morning with the sausage still frozen
 come home to a wonderful healthy meal or
bake it an hour before dinner is served with only 15 minutes prep


You just can't cut raw sausage at least not easily
I do poke a few holes so the flavors blend into the broth while cooking
then cut them after they've cooked

oh yea sprinkle with cheese if you want to add calories and flavor boost

Naturally Gluten Free - I just love saying that
there are already so many yummy foods that have always been gluten free
we just didn't label them

Sausage Vegetable Medley

1 ½ lb  raw chicken sausage links

6 cups random vegetables (carrots, mushrooms, celery, green beans, peas, broccoli, bell pepper all work well)
2 cups or so of cubed potatoes (skip if your avoiding carbs add more veggies)
2 cups chicken broth
1/3 to 1/2 cup white wine if you have it on hand --- (I’m not giving up wine )
1 small container about 3-4 ozl of baby spinach (to add at the very end)

 Directions:

cut all veggies into 2-inch chunks, put in crockpot add whole sausage, broth and wine cover and cook on low for 8 hours or high for 4.10 minutes  before serving, cut sausages into 1” chunks add a handful of fresh spinach and cover for 10 minutes to wilt leaves

 Variations:
Hot Italian Sausage, beef broth, 1 can of tomatoes
Sweet Apple Chicken Sausage, sweet potato, onion
 Buffalo Chicken Sausage, Celery, Carrots, blue cheese to sprinkle when serving
pre
 cooked chicken sausage also works I would just cut the veggies smaller cook for less time the precooked sausage gets a little shriveled dry
Add a can of red beans, rinsed and drained
You can mix fresh and frozen veggies
 You can pop this whole dish in a Dutch oven and cook it on 375 for 1 hourAlso I have given it a jump start by microwaving the full crockpot for 10 minutes, then into the crockpot for 2 hrs on High.
